Steps

  1. Split a large vanilla bean lengthwise with a sharp knife.
  2. Scrape the seeds from the pod using the back of the knife.
  3. Add the seeds and the pod to your recipe.
  4. Simmer or steep the mixture to infuse the vanilla flavor.
  5. Remove the pod before serving if desired.

  1. Whisk the egg yolk and sugar together in a small bowl.
  2. Heat the milk in a saucepan until it just begins to simmer.
  3. Split the vanilla bean and scrape the seeds into the hot milk.
  4. Pour the hot milk mixture slowly into the egg yolk while whisking constantly.
  5. Return the mixture to the saucepan and cook over low heat, stirring, until it thickens enough to coat the back of a spoon.
  6. Strain the custard to remove the vanilla bean pod and serve warm or chilled.
