Substitute for buttermilk for whipping

When substituting buttermilk for whipping, the goal is to find a base that can be aerated and stabilized, as traditional buttermilk is too thin to whip on its own.

Kefir

1 cup kefir
While thinner than cream, plain kefir can be whipped briefly to a frothy texture if chilled and used immediately.

Milk + Vinegar

1 cup milk + 1 tbsp white vinegar
Similar to the lemon juice version, this creates a curdled base that can be whipped into a temporary foam but may separate quickly.
